It’s Christmas time!!! It’s the most wonderful time of the year and the time when the house starts to smell like nothing but spice!

If you are looking for soft on the inside and crispy edged gingerbread cookies, otherwise known as the perfect combination, you have come to the right place! 😋

Ingredients:

  • 2/3 cup softened butter
  • 3/4 cup brown sugar
  • 2/3 cup unsulphured molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup milk
  • 3 & 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 Tbsp ground ginger
  • 1 Tbsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cloves
  • Extra Milk or Water – Pretty much a form of liquid of your likings

Items Needed:

  • We used our kitchen aid with attachments
  • Measuring cups
  • Rolling pin
  • Large Baking Pan
  • Parchment Paper
  • Cooling rack
  • Extra bowl for mixing

Optional:

If you are choosing to decorate the cookies don’t forget the icing and sprinkles! We even had candy eyeballs!

Preparation:

Before we start we like to prepare all our ingredients and have them measured out and ready to mix together.

Let’s Get Started!

Instructions: Making the Dough

  1. Take your main mixer bowl and you will start by softening the butter for 1 minute with your mixer on medium speed.
  2. Next, add the brown sugar and molasses and mix until creamy.
  3. Then, add the rest of the wet ingredients ( 1 large egg 1 tsp vanilla extract 1/3 cup milk ) and mix for 2 minutes until smooth.
  4. In a separate bowl, combine the dry ingredients and mix them.
    • 3 & 1/2 cups all purpose flour1 tsp baking soda
    • 1/2 tsp salt
    • 1 Tbsp ground ginger
    • 1 Tbsp ground cinnamon 
    • 1/2 tsp ground allspice
    • 1/2 tsp ground cloves
  5. Once you’ve noticed the dry mixture is well blended pour the dry ingredients into the bowl with the wet ingredients and mix.
  6. Divide the dough into 2 and wrap each half in parchment paper.
  7. Flatten each into a disc as best as you can. We needed some strong hands here for this. 
  8. Chill in the refrigerator for at least three hours, or more. Did you know that leaving it in the fridge for three hours is like marinating the dough. It helps strengthen the spices and flavor!

Three hours later…

Making the Cookies

  1. Preheat the oven to 350 F and prepare 2 to 3 cookie sheets with parchment paper. We were able to make about 5 (11×18) cookie sheets of small cookies.
  2. With your hands take some flour, making sure the surface you will be using is clean, and sprinkle the four on your surface as well as your rolling pin and hands.
  3. Take the dough out of the fridge and parchment paper. Place the dough on your area with flour and use the rolling pin to roll the dough. During this time we add some more milk little by little and knead the dough to get it to stick together better. 
  4. Once the dough is the right consistency roll it to 1/4 inch thick.  
  5. Once the dough is thin enough… have fun with some cookie cutters and cut shapes and place them on the cookie sheets. We got these cookie cutters at 60% off. (NOT an affiliate link) Follow us on Instagram to find out more on what we use and when we get them for a good price.
  6. Combine and roll scraps as necessary.
  7. Place the cookie sheet in the oven and bake the cookies, checking on them at 8 minutes. 
  8. When done remove from the oven and allow to cool for 5 minutes before moving them to a rack to finish cooling 
  9. When cool, decorate the cookie to your preference or eat them plain

Few Tips and Reminders

If your dough looks crumbly like the image below… add milk or water! It means there is too much flour and it needs more moister!
